Iwaizumi
“Iwaizumi" is a blended shochu which is a mixture of several malts. Each malt is fermented
by different types of koji, one is called White koji and the other is called
Black koji. Moreover, the methods of distillation for such malts vary as
follows, the normal pressed distillation which creates a rather heavy taste
and the decompression distillation which creates a rather clear taste. The
taste of malts is also affected by respective aging periods. The result of
all of these fine and exact combinations is that Iwaizumi has a fresh and
clear flavor like the pure water streams of the rocky mountains. Iwaizumi
is the most suitable shochu to a meal complement.
